Why is the auto-processing option greyed out?
Auto-processing is not available for Specific Products tasks, because a fixed list of products can never gain new members.

The option is disabled when the task uses Specific Products. A fixed list of products never grows, so there is nothing new to watch.
Go back to the first step and choose All the Products or Specific Collections. New products that match will then be tagged automatically.
